KCET is hosting an episode of California Matters with Mark Bittman on Chinese food.
Yong Chen, UC Irvine history professor and author of Chop Suey, USA: The Story of Chinese Food in America talks about the evolution of Chinese restaurants in the U.S. with Mark Bittman in this UC Global Food Initiative production.
They visit Los Angeles Chinatown to compare the artifice of the old "food towns" with Irvine, a growing Chinese American suburb with restaurants that cater to an increasingly affluent immigrant community.
